Cocktail Recipes: Boo Loo

A smooth blend of pineapple and honey, but beware its quiet strength.

A whole ripe pineapple
A few small chunks of said pineapple
2.5 oz  pineapple juice
1.5 oz fresh lime juice
1.25 oz honey mix (1:1 honey & water)
.75 oz dark Jamaican rum
.75 oz Lemon Hart 151 Demerara rum
1.5 oz Demerara rum
1.5 oz Gold Puerto Rican rum
1.5 oz club soda

If this week there is a surplus of pineapples in the kitchen, follow intrsuction below and you will be able to serve your Boo Loo in a nice carved Pineapple to extol the virtues of this venerable libation.

Pinapple Shell:
Using a sharp knife cut the top off of the pineapple and reserve for garnish.
Using a VacuVin pineapple corer, remove the fruit from the pineapple, making sure to leave several inches at the bottom to ensure you don’t get leaks. You also need to be careful to keep the sides intact, but don’t worry, this device is ridiculously easy to use. They’re seriously awesome and only cost about $10.
Reserve the juice for use in the drink and set aside a few fresh chunks.

The Mix:
Fill pineapple shell with crushed ice.
Place pineapple chunks, lime juice, pineapple juice and honey into a blender and blend until smooth.
Pour the blended mixture into the pineapple.
Pour rums into the pineapple and top with soda, then stir until the mixture is chilled.
Place a straw (or two–this thing is big and potent) into the pineapple and partially cover with the pineapple top.

The Boo Loo is a drink that looks playful, but packs a serious punch.  You can adjust the sweetness with more honey mix if you like, just don’t plan on driving anywhere for quite a while after having this bad boy!
